Breakfast: Cappuccino Pancakes with
Mocha Syrup
You deserve to treat yourself to
brunch every now and again. And what better way to do so, than with cappuccino
pancakes drizzles with mocha syrup?
In a large mixing bowl combine:

5 cups flour
·
1 tablespoon baking powder
·
5 tablespoons of Caffè di Artisan
coffee pods
·
2 tablespoons granulated sugar
·
.5 teaspoon salt
·
1 egg
·
1 cup milk
·
2 tablespoons melted butter
Mix well and pour onto a hot griddle;
flipping each side as it becomes light, golden brown. Serve with mocha syrup.
To start, get a small saucepan and
whisk together:
·
5 tablespoons of Caffè di Artisan
coffee pods
·
.25 cup cocoa powder
·
.25 cup sugar, granulated
·
.25 teaspoon salt
·
1 teaspoon vanilla extract
Simmer over medium heat for roughly
five minutes. Once thickened, pour over pancakes.
Lunch: Chipotle & Coffee Tofu
Wrap
For lunch, you are going to discover
the power of a coffee marinade. The chipotle and
coffee tofu wrap is a light lunch with lots of flavour.
Perfect for an early lunch when you need to stay alert in the afternoon.
Start by cutting your block of extra
firm tofu (15 ounces.) into .5 inch wide strips. Cook over medium-low heat for
15 minutes. The sides should be golden and a little dry.
In a food processor, collect:

1 cup brewed coffee, chilled
·
2 chipotles in adobo, plus 1 tbs.
adobo sauce
·
2-3 cloves garlic, smashed and peeled
·
.25 cup red wine, such as pinot noir
·
3 tbs. honey
·
2 tbs. olive oil
·
.5 cup water
Transfer the mixture into a medium
bowl. Place the cooled tofu into the bowl, being careful to coat each piece
fully. Refrigerate for two hours.
Preheat the oven to 375 degrees.
Meanwhile, combine your favourite fruits and veggies with the coffee and
chipotle marinated tofu into a whole wheat tortilla. Examples include plum
tomatoes, spinach, olives, kale, and carrots.
Dinner: Coffee Chili
If you have a light lunch, you might
as well as a heavy dinner. Our next recipe is for coffee chili.
Start by cooking 2 pounds ground beef, 2 cups onion, 1 cup bell peppers, and 3
cloves of fresh, crushed garlic in a large pot until browned.
Stir in 1 teaspoon cumin and 3
tablespoon chili powder (more if you like it spicy). Add:

16 ounces of chopped tomatoes, canned

2 cups of coffee made from Caffè di

·
1 cup water
·
4 ounces of chopped green chilies
·
5 teaspoons salt
·
.25 teaspoon cayenne pepper
